The Galassia Pane professional range of bread dough mixers is engineered for exceptional durability and strength. These mixers strike the perfect balance between the hook’s strokes and the bowl’s rotations per minute, resulting in well-oxygenated dough ready to be baked into high-quality loaves. The Galassia PN is designed to comfortably mix a single bag 25kg dry flour. They are equipped with two-speed motors allowing users to tailor the machine’s performance to their specific needs.
The control panel provides precise management of the kneading process to achieve the desired dough consistency. The Galassia PN40 model feature two independent motors—one for the spiral shaft and one for the bowl shaft—enabling higher revolutions per minute and separate control of their speeds. The opposing rotations of the spiral and bowl work together to oxygenate the dough and develop a strong gluten network. Additionally, the mixers come with a standard SITEC timer that automatically switches between speeds and offers two corresponding speeds on the spiral tool. A jog function is also included to assist with dough extraction.

- The forged axle, positioned under the head cover rotates the spiral.
- A rotating spiral amalgamates, mixes, refines and oxygenates the dough in the bowl.
- The bowl constantly draws new dough under the spiral to be worked.
- The machine is provided with three wheels, two fixed back wheels and one at the front.
- Two independent motors on the spiral shaft and the bowl shaft to allow for a higher number of revolutions per minute and for separate control of their respective speeds. The opposing rotations of the spiral and the bowl mix the dough allowing oxygenation
